I dare to say this is the pinnacle of Japanese kitchen knife.
I use to think that the hamon on a hoyaki kitchen knife can't get better than the Sakai wave pattern introduced by Master Tatsuo Ikeda. I knew I was wrong as soon as I saw this. The blade a mirror polished 300mm White 2 Yanagiba with the most exotic hamon that I have came across: the Moonnight Fujiyama (Fuji Mountain), forged by a famous master who does not wish to name himself.
The reason that this knife gets the name: "The Golden Phoenix" is because of the saya and handle design: A Phoenix spanning across the saya and handle painted using one of the most traditional and exotic Japanese lacquer painting techniques: the Maki-e.
"Maki-e (蒔絵, literally: sprinkled picture) is Japanese lacquer sprinkled with gold or silver powder as a decoration using a makizutsu or a kebo brush. The technique was developed mainly in the Heian Period (794–1185) and blossomed in the Edo Period (1603–1868). Maki-e objects were initially designed as household items for court nobles; they soon gained more popularity and were adopted by royal families and military leaders as a symbol of power." I feel extremely lucky to get my hands on this beauty as I was told by the supplier that this model will only be produced two or three in a year due the difficulity in making the saya and handle.
Knives and Stones is proud to present you, the Golden Phoenix, the perfect fusion of the traditional water quenching technique and Maki-e lacquer painting.
