Like all the Okunoto konro, it's made from \u003cstrong\u003enatural diatomaceous earth quarried on the Noto Peninsula in Ishikawa\u003c\/strong\u003e. That material is the whole point: it's an outstanding insulator, so heat stays in the box and the charcoal bed sits at a temperature you simply cannot reach on a gas grill. Because it's natural mud rather than some unspecified composite, there's nothing in the walls to leach out when things get seriously hot.
