Sakai Takayuki Aoniko
The Sakai Takayuki Aoniko line is a unique offering from Sakai Takayuki. If you already have some experience with stainless Japanese kitchen knife, such as Tojiro DP or Sakai Takayuki Grand Chef, and wanted to go a step further to really try out the "real Japanese edge", the Aoniko line is probably one of the best options out there. This line has a very similar profile as the Grand Chef line but is made of the famous Hitach Blue 2 in monosteel construction (solid piece of blue 2). The Blue 2 steel offers extreme cutting performance, yet with a very long lasting edge. It is also the choice by many bladesmith to hand forge their master pieces, for example, Master Itsuo Doi use the Blue 2 steel to forge his Hienn yanagiba.
