
Wakui is popular not only because it is priced right, but more importantly because it cuts really well. The white 2 stainless clad line is a typical Sanjo knife with top level F&F and the "Sanjo taper" (thick at the heel, and tapers drastically to a very fine tip). Super thin behind the edge means it just glides through food with minimal effort. Personally I really like white 2 because how easily it can be sharpened to a screaming sharp edge.
