正本·総本店の白二鋼本霞：多くの方に愛されるKSシリーズです。このシリーズは正本の中で最も人気のあるラインナップで、日立金属の白二鋼（White 2）を軟鉄で挟み込んで鍛造されています。炭素のみを添加した白紙鋼は最も純度の高い鋼材であり、極めて鋭い切れ味を実現しながらも研ぎやすさに優れています。KSシリーズはKKシリーズと比較して、仕上げとフィット感がより優れています。
日本包丁界の王者とも称される正本·総本店がKnives and Stonesに登場しました。1872年に松沢巳之助によって創業され、1891年に平野吉三が継承し、現在は第6代目の正本である平野正浩が経営を担っています。約150年の歴史を持つ正本·総本店は、日本のほぼすべての料理人に最高峰の包丁ブランドとして認められています。
