    ダマスカス三枚合わせは、地金にダマスカス鋼を使用した構造で、刃に装飾的な美しさを加えます。ステンレス芯鋼の包丁の場合、ダマスカス地金もステンレスとなるため、炭素鋼やセミステンレスの芯鋼を錆や変色から保護する役割も果たします。
