正本・白子霞：日立金属の白二鋼と軟鉄を鍛接して造られています。炭素のみを添加した白紙は最も純度の高い鋼材であり、極めて鋭い切れ味を実現しながらも研ぎやすさに優れています。KKラインは、予算を抑えつつもKSラインと同等の切れ味を求める方に適しており、伝統的な日本の片刃包丁をお試しになりたい初心者の方にも最適です。
日本包丁界の王者とも呼ばれる正本·総本店が、Knives and Stonesに登場しました。1872年に松沢巳之助によって創業され、1891年に平野吉蔵が継承し、現在は第6代目の正本である平野正浩が経営を担っています。約150年の歴史を持つ正本·総本店は、ほぼすべての日本の料理人から日本最高の包丁ブランドとして認められています。
