This creat a look of small stream flow alongside an acient rock, which I found fits the name of the line perfectly. Although we classify the finish of this line as a Nashiji finish, complexity of the colour and texture on the cladding of these blades have far surpass the typical Nashiji we often see. Read more The Yorokobi(よろこび, Joy) Copper Damascus series designed by Hatsukokoro is a series under constant evolution, after two iterations of Sanjo style designs, the current Etched Kurouchi version under production by Nigara received a small tweak: A vertically oriented Tsuchime(hammer tone)pattern is now added to the surface of the knife above the Shinogi line to add more texture and character to the blades. Being one of the more artistic design coming out of the collaboration between Nigara and Hatsukokoro, Yorokobi and other similar lines really stand out with their dazzling look. Laminated composite material undergone complex forging, grinding and surface finishing processed to obtain a unique combination of texture, colour and contrast. The bright orange copper bands flows over the dark, etched steel and textured surface like a lava flowing over dark earth, paints a vivid and organic scene onto a sharp blade. Nigara is now well known for their special grinding on their K-tip knives: an additional bevel on the spine exposes the Damascus cladding, create a bland of copper flows around the entire blade, which makes these knives even more desirable.A focus on the look and style doesn't mean the blade falls behind on performance, the SLD steel core can offer a combination of very good edge retention, decent toughness and a relatively low maintenance(thanks to its higher chromium content. The Yorokobi line used to suffer from a thicker grind that was common on these Nigara "designer" knives, but the recent Yorokobi we receives have a noticeable reduction in thickness, and they now have quite a decent cutting performance.I would recommend these knives to those who enjoys collecting unique knives or are looking for a very special gift, the combination of black etching and bright copper is definitely packed with wow factor, making these blades pieces of art while being perfectly functional as knichen knives. Read more The Hatsukokoro x Nigara(巓, Peak) can truly live up to its name. I would consider this as a line as a perfect representation of Nigara's approach to blade making, and the blade by themselves are remarkable in many means.The elephant in the room is, it is a Coreless/Dual Core construction, with forge-weld Blue 2 and White 2 carbon steel that extend all the way to the edge. In the context of Japanese kitchen knives, this construction is usually reserved for pretty high-end, hand-forged pieces and collector items that are not approachable, that is if they happen to be available when you find them. With some magic, Nigara seems to be able to produce them in relative large quantity, just like what they did with their Yorokobi SLD copper Damascus line.The reason I say this line is a representative piece for Nigara is, it have done really well at what this brand is best at, and pushed it further. From all the higher-end lines we see recently like the Ryusui or Ginsan Kurozome, Nigara seems to be very into artistic knife with complex visual elements to them, and some interview of Yoshizawa Go, the currently leader of the brand, have clearly indicated his passion In Damascus. The Itadaki reaches the peak regarding complexity in construction and finish, infusing Damascus, Kurouchi, Tsuchime and Kurozome/etching on one blade, and the profiles in the line with k-tip has that unique grind around the spine to add more texture to the blade. While is its pretty complicate to manufacture with great consistency, the truly impressive part is that Nigara manage to keep these elements organised and clean, resulting a knife you can hold up close and look at for a long time.When inspected closely, the Damascus appears to be not uniform, the steel becomes more shiny as it gets further away from the edge. It is a indication that Nigara may added some more high nickel steel on top of the blue and white steel, and have them concentrate on the outer side to create contrast, and when looking across the blade starting from the edge, the tone will shift from black to grey then silver, ending with the black Kurouchi finish that is covered with sharp chisel marks that reminds me of You Kurosaki's Fujin line. When holding the blade sideway and edge down, it's like a side of the mountain, starting with dark earth, reaching up to the snow line, and ending at a steep cliff face that covered with sharp, weathered stones. This is truly a high level of craft combining with thoughtful design that I cannot appreciate more.On top of the great design, the execution is very good. Some of these high-end design from Nigara happens to be on the thicker side and Doen't perform as great. But their improvement on these blades are noticeable on the Newer SLD Yorokobi Special and the later batch of the copper Damascus, and the Itadaki is a pretty good cutter. With a fine edge composed with Blue and White carbon steel, there is not much hesitation for the blade to pierce through the skin of a potato, the weighty blade then fall through quite smoothly. If I'm picky, I shall say there is a bit of food sticking on the bevel, but it is unavoidable with that polished and etched finish.A coreless hand-forged knife would felt quite distant for many knife enthusiasts, and for many others they may not consider or even heard of it. The production of Itadaki has brought down the price of this kind of prestige blade to a range that is considered affordable for a lot more enthusiasts, which is a remarkable move. With this product line, Nigara have shown us its capability in designing and executing the production of a blade like this I can see there's a proud element in it when they named it "Peak"., Read less

Read more It is known for a many that Hatsukokoro have been working closely with Nigara to orchestrate some product lines that are both good in performance and pleasing in appearance. I thought after seeing the Yorokobi(喜び) SLD Copper Damascus, the Ginsan Kurozome Nashiji Damascus and the Ryusui(流水) Blue 2 Nashiji Damascus line, there won't be much that they can do to suprise me. Yet when I pulled these dense blades out of the protective sleeves, the high-constrast pattern above the Shinogi line and the way light reflecting off the wide bevel suggests that this line will be another higher end line with beauty and performance by Nigara.The eye-catching Damascus pattern layed over the Kurouchi finish is probably the most eye-catching feature that grabbed your attention. Unlike most of the Kurouchi finish we see, the oxidation layer on these knives are very dark, It is likely achieved by etching like the Yorokobi SLD line. In contrast, the silver Damascus pattern pops off strongly over teh dark surface, which reminds me of the now-nearly-impossible-to-obtain "River Jump" Tanryusen by Tsukasa Hinoura. I would assume that these knives actually undergone similar process, where the more reactive metal in the Damascus is etched away, leaving the high nickel metal protruding out above the surface, which allows them to be polished after a darker layer of oxidation formed during the heat treating. As these black crust are quite darker and thicker than the typical Kurouchi finish, additional etching are likely done after the polishing to further increase the contrast.The cutting performance is there to match the complicated finishing process, although it can be hard to believe something this thick will actually cut well. The secret is a combination of very wide bevel and a classic concave grind done on rotary stone wheel. These two techniques helps bringing down the thickness of the knife very well, so the geometry behind the edge is pretty thin. Being a semi-stainless tool steel, the SLD/D2 offers an excellent edge that is fine and bity, also a decent toughness and good edge retention that surpass most common stainless steel. It does require some care to stay shiny, but it is one of the more rust resistant semi-stainless steel thanks to a 13% chromium content. With the help of the weight, there aren't much resistance perceivable even when cutting through dense roots like potato or carrot. This kind of "Heavy Blade with a Fine Edge" approach was seen on some of the Tosa knives like the Kurokuma Line, but compaire with a low sabre grind, the high concave grind on these blade have way less resistance and wedging on dense food, the downside is, it can creat some stickiness on the wide bevel. However, as the heavy blade carries quite a lot of inertia, it can push through the drag on the bevel regardlessly and allows this to be one of the few knives in our collection that can cut through potato with just gravity.The thickened spine above the heel suggests this line is indeed forged out, and both the finishing and grind oif the wide bevel is pretty labour intensive. These factors bring up the price of this line up to a rather high point. If you are an eojoyer of popping through vegetables quickly with a dense blade, my justufication for you is that this SLD line is the closest thing you can get to Guts' Drangon Slayer in Berserk. Read more This line that Nigara started producing recently is another step foward toward a intricate yet astonishing knife with decorative elements. The combination of various forging and finishing techniques have given blades from this line extensive amount of detial, but they are arranged so beautifully on one single knife that there are no compromise on visual integrity.I believe there is a need to unfold these blades layer by layer, that is how complicated they are. The innermost core is the Hitachi Ginsan steel, which often considered as the stainless alternative of the famous White 2 carbon steel. What characterise Ginsan is the low alloy content other than chromium, which allows it to be sharpened easier than most of the other stainless steels, while maintaining good edge retention and hardness. This more premium steel forms a good foundation for this product line to have a good cutting edge and being easy to sharpen.Cladded over the core steel is a beautiful damascus cladding. Unlike the Anmon series, this line doesn't have a dazzling raindrop damascus pattern. Instead, the alternating steel reveal themselves dense bands, with observable marks that indicate how they are struck and forms the final wavy pattern. Athough it is a dense pattern, the Kurozome etching have created a high contrast between two steels so each layer can be clearly identified. On the Gyuto and Petty with a Kiritsuke tip, since they have an additional grind put above the tip to thin them down further, the exposed pattern will have two density converging at the tip, making the beautiful pettern even more stunning.The last layer of steel on top of the damascus takes up most of the flat area of the knive, it receives a Nashiji-like treatment, however, the finish is not uniform and there are still rough marks left from forging, indicating the stikes from tools and oxidation from heat treating that the blade have gone through. These spots of darker marks spreads organically across the blade, working in conjunction with the Nashiji finish to give the knife a weathered mineral look, almost like Nigara have forged its extensive history into the blade.The final touch is the Kurozome finish, which uses acidic solution to darken the steel, as different composition react differently, some higher carbon steel will become darker than steel with chromium in it. This finish in my opinion is the finishing touch that brings the whole knife together, not only it gives contrast to the damascus, it coats the whole blade with a layer of dull, unifying yellow tint, along with the thickened Sanjo-style tang, the entire line emmits a sense of density, which is what I believe the intent of the designer/maker from Nigara.For the cutting performance, this blade won't excell against the thinner blades like Shiro Kamo Kurokumo or geometically optimised blade from Yoshikane Hamono, its thicker bevel have already determined that it is a workhorse grind. Although it is not the best for food penetration, the edge sharpness is still quite up to our standard.This Ginsan line produced by Nigara is one of the most complicated product line I've seen in terms of finishing techniques, yet it is well-curated so the end result is stunning to say at least. It will finally comes down to if you think the hefty price tag is worth it, but I believe it is not too much to ask for a quite practical stainless knife that is packed fully with wow factor. These blades is another step up from the very popular Anmon(暗紋) line in terms of artistic value, which also put up a strong statement that Nigara shall glorify its 350 years of extensive sword forging history with this highly skill demanding practical art.The Honyaki line from Nigara is made with Hitachi White 1 or Blue 2 steel, these are the more pure carbon steels with the Blue 2 have a small amount of alloy content introduced to it, they are characterised by the ablility of getting a very keen edge, hold sharp for an extensive amount of time and be very easy to sharpen at the same time. Both steel belongs to the Hitach Yasugi Carbon Steel family, which is composed of different grade carbon steel, originally developed to replace the scarce Tamahagane - the steel smelted in a acient way to make all kinds of traditional edged tools, including the Katana.Once a regionally famous maker of Katana, Nigara as a brand have been passing down this craft for over 350 years, now headed by the 8th gen bladesmith Tsuyoshi Yoshizawa(吉澤 剛), the brand is making a comeback to this traditional skill with their Honyaki line, throught some remarkable artistic features that are reminiscent to traditionally forged Katana. The Honyaki knives are made in very similar ways to the katana, both involves extensive forging and differential hardening using clay. The shape and quality of Hamon(波紋, wavy pattern formed on the boundary of hardened edge and softer spine through applied clay)appeared on the Katana and Honyaki knives can often differentiate their artistic values. Often the kitchen knives are made with very regular pattern, with less dynamic look compare with Hamons found on Katana. However, some of the Nigara's Honyaki have clearly departed from this way and created much more dynamic Hamons with features like strong Nioi and Boushi that are very comparable with Katana. In terms of how wild the Hamon is, maybe Hashimoto's Honyaki is the only thing that is on par with these knives.Another feature that is unique to the Katana is the pattern formed when the Tamahagane are folded over and over, this process distribute the impurities and alloys evenly across the blade to obtain a uniform strength across the blade, as the result, different elements are stretched out along with the steel and lead to various types of patterns.Forged with a homogenous steel coming out of modern factory, the Nigara Honyaki blades requires no folding to gain the uniformity, but as they are hand forged into shape out of a billet, they need to get heated over and over under certain temperature, so they don't lose carbon content through oxidation. In this heating-forging process, the alloy content would precipitate out, as they get stretched with the forging of the blade, they will form pattern that is quite similar to the folding pattern on the Katana. This is called alloy banding, a phenomenon that can be found on only forged, not stamped blades. The alloy banding marks the intense labour and remarkable skill behind the creation of the blade and add another layer of texture onto the blade. The Nigara Honyaki line, with all the blades receive a etching finish, reveals the banding with a high contrast so they can be observed easily in all kinds of lighting condition. These blades are for those who are looking for a more durable powder stainless steel edge, but also like the rustic look of the Kurouchi. As far as I know, this isn’t a common combination on the market, not to say that Nigara offer a whole series of different sizes and profiles in this line.Being the most commonly used powder stainless steel in the Japanese kitchen knife industry, the SG2/R2 holds its place steadily with a good combination of toughness, edge retention and corrosion resistance. However, to get you hands onto this steel would be bit costly. Tojiro offers a series of SG2 knives from their budget DP series, Hatsukokoro also have a SG2 member in their Hayabusa family that comes at even lower price. However, the hand-grind bevel by Nigara’s skilful sharpener offers their knives a much more optimised geometry, beating Tojiro and Hatsukokoro with a better overall cutting performance while costing only a slightly more.The fit and finish is consistent as usual for these Nigara blades. Good surface consistency, straightness and sharpening. The Kurouchi gives a completely different look to its twin sister line, making these knives a bit more popular choice for gifting. I have to be honest, this layer of black finish seems to be painted on instead of formed during the heating of the blade, but it is understandable as the stainless cladding doesn’t require the corrosion resistance of this oxidation layer, and is seems to be hard to form a dark Kurouchi finish on surface of the high alloy stainless steel.Overall, Nigeria’s SG2 Matt Migaki lines are successful blades that excel in performance at their price bracket, the addition of the Kurouchi finish allows even more characterful selections for buyers and indeed we found many customers of us favour this more rustic look. The SG2 Hayabusa produced by Hatsukokoro offers a very low price for those who want to experience this steel and its ability to hold its edge, but the Matt Migaki Tsuchime line from Nigara would have a better sharpness and food release due to its hand-sharpened, sabre grind concave edge geometry. The overall fit and finish is just like other knives produced in similar fashion by Nigara, you can expect very consistent surface condition, straightness and rigidity throughout different profiles.
