Sakai Takayuki Cranked Spatula / Palette Knife

Sakai Takayuki, while famous for its unmatched craftsmanship of their traditional handmade Japanese kitchen knives, was originally a specialist in Japanese sweet making (製菓) tools. As a result, Sakai Takayuki is still manufacturing tools for sweets and cake making in Japan, and not surprising, they are some of the best out there. 

You won't see many other professional knife makers that are offering baking tools, but with their deep knowledge of steel and knives, tools such as the palette knives are very popular among professional sweet makers because they will just last for years without loosing the elastic feel.
