The Shibamasa VG5 Damascus Santoku 170mm is a superb all-rounder forged in Seki City, Japan, blending striking aesthetics with reliable performance. At its core is stainless VG5 steel—a variant in the VG line prized for toughness and edge stability—clad with layers of stainless Damascus for durability and a beautifully patterned finish that makes each blade unique.
The handle is a Western (yo) style, crafted from walnut wood with a simple yet elegant design. Its balanced weight (≈ 105g) gives a controlled feel ideal for both home cooks and those exploring serious knife tools without premium price tags.
Whether you’re preparing weekday meals or seeking an entry into fine Japanese cutlery, this knife offers excellent value, sharpness, and everyday versatility. Care involves hand-washing, gentle sharpening, and avoiding extreme stresses (like frozen food or bones) to preserve its performance and edge.
Care Instruction
- Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
- Wash with neutral detergent after use, and wipe dry;
- Please don't wash knife with dishwasher, it will damage the wood handle;
- Be careful not to leave the knife close to a heat source for a long time;
- It is a lot more dangerous to cut with a blunt knife than a sharp knife!
- It is best to sharpen a Japanese knife regularly on a waterstone.
