Genkai Masakuni (玄海正國) Mizu-Honyaki White #2 Fuguhiki 300mm

An exceedingly rare treasure from the legendary Genkai Masakuni—this Mizu-Honyaki Fuguhiki is one of the most elusive forms in traditional Japanese knife making.

While yanagiba are already regarded as pinnacles of craftsmanship, the fuguhiki is on another level of rarity. Its exceptionally thin profile, designed to slice fish into the finest possible sheets, makes the forging and sharpening process fraught with difficulty. Blades are prone to warping or breaking, which is why most smiths avoid producing them altogether. As a result, honyaki fuguhiki are significantly more expensive and sought after in Japan than their yanagiba counterparts.

Yet when executed successfully, the fuguhiki delivers a level of performance unmatched by any other knife—capable of producing impossibly delicate cuts of sashimi with unrivalled finesse.

To honour its uniqueness, this piece is paired with a custom K&S magnetic ebony saya, designed with musk ox horn inserts for both function and elegance. The saya is friction-fit, holding the blade securely without the need for a pin, ensuring both safety and beauty in presentation.

Alongside the monumental Maguro Kiri, this knife stands as one of the true “unicorn blades” of the Japanese culinary world. For serious collectors, it represents not just a tool, but a testament to the limits of what can be achieved by hand and fire.

This knife is also on consignment from a long time K&S customer. K&S guarantees authenticity and will handle the safe, secure shipping of this exceptional blade.

Weight: 190 g
Edge length: 284 mm
Thickness: 2.8mm / 2.1mm / 0.7mm (heel / mid / 1cm from tip)

Talking about Honyaki kitchen knives from Japan, we always think about the beautiful wave-pattern hamon. I have plenty of those waiting to be listed, but I want to introduce you this beautiful mizu-honyaki blade as my first Honyaki knife here at Knives and Stones: the magnificant "Moonnight Fuji mountain", which is named after its painting like hamon line featuring the famous Fuji-mountain. The K&S Special edition comes with an elegant K&S Ringed Gidgee triple spacer handle with blonde / cream buffalo horn handle and a matching black hardwood saya.

As far as I know, there are only two masters in Japan that can forge this type of hamon, and one of them is "Genkai".

This is one of the finest Japanese honyaki kitchen knives that you can possibly buy, I absoutely LOVE his work, and I want to share them with you.
