Care Instruction
  1. Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
  2. Wash with neutral detergent after use, and wipe dry;
  3. Please don't wash knife with dishwasher, it will damage the wood handle;
  4. Be careful not to leave the knife close to a heat source for a long time;
  5. It is a lot more dangerous to cut with a blunt knife than a sharp knife!
  6. It is best to sharpen a Japanese knife regularly on a waterstone.

The one that rules it all!

It is with my great pleasure to finally be able to unveil this long secret to you: The Hatsukokoro Sentan Chinese Cleaver in White 2 with Stainless Cladding. A project that I personally get involved with Hatsukokoro for over a year now. 

As you might know, there aren't many "useable" Chinese cleavers available in the market. The good Sujimotos (4006, OMS6) are quite big, and expensive, while the CCKs are quite soft. Another big disadvantage for conventional chinese cleavers is most if not all of them are iron cladded, so it tends to get rusty easily. Not to mention there are lots of them just don't cut. 

WE NEED SOMETHING THAT DEALS WITH ALL THESE!

Solution?  The Sentan Cleaver. Something that is forged by the Chinese, who knows what It is a true thin slicer that is less than 300g and can go through a potato just as good as any top Japanese Gyuots.
