The Shibata Bitey Finisher is a unique 600/1200‑grit combination whetstone engineered to deliver a textured, toothy edge that bites into food with authority.
Developed by renowned sharpener Takayuki Shibata—known for “differential grit” sharpening methods—it offers a harder-than-normal medium grit side to efficiently deburr and build a microbevel, followed by the finer 1200 side for refinement.
After use, the alternating 600/1200 strokes yield an aggressive yet balanced edge ideal for cutting tough vegetable skins and meats. The result: more bite, longer edge life, and precise performance.
