In the quest of finding a decent Chinese slicing cleaver, I came a cross the Deng Xiaowen brand made in Dazu city of Sichuan, China. Dazu is one of the knife producing cities that has a long history of making things the traditional way. Knives are forged out of carbon steel billets, instead of stamped.
This knife is forged out of unknown carbon steel, with a rustic but very comfortable handle. The spine is a unique SiChuan style, with a thick and wide spine that is used to break up poultry bones. Below the spine, the knife tapers aggressively and becomes super thin. At 366g, this knife is lighter than the Sugimoto 6, and is designed for SLICING ONLY.
We had a brief discusson about this knife at KKF a few years back :)
