A bunka is a compact, all-purpose knife whose spine drops at an angle to a sharp K-tip point, a shape that scores, slices and does tip-led detail work a rounded santoku tip cannot. The flat-ish edge keeps the chopping strokes of a santoku.
About 100 knives here run from short ko-bunka to 210 mm blades, many in SG2 stainless, with Blue 2 carbon, VG10 and Ginsan options. It suits a cook who wants one broad blade for everyday vegetables, fruit and boneless meat.
