A petty is a small utility knife with a slim, double bevel blade, usually 120 mm to 180 mm long. In hand it peels, trims and garnishes; on the board it slices shallots, fruit and herbs where a full chef's knife feels oversized.

This collection holds more than 200 petty and utility knives, many in SG2 and VG10 stainless steels, with carbon options in Aogami Super. Blades run from small paring sizes to the deeper tall petties that edge towards a small gyuto.
