我要如何徒手在砥石上磨日本刀?

徒手用砥石磨刀是一項可以學會的技術,而不是天賦。先依照砥石需求把石頭弄濕(傳統浸水石先泡水幾分鐘;像 Chosera 這類潑水即用砥石只要噴水,長時間浸泡反而會傷石),再把刀以大約 15 度角貼在砥石上,用輕而穩定的來回動作,沿著整條刀口磨到反面出現毛邊為止。

當整條刀口都起了毛邊後,翻面在另一側重複,最後用幾下非常輕的交替磨刀來去除毛邊。數來回是常見的新手錯誤:要靠手指去感覺毛邊,因為每把刀、每種鋼材的反應都不同。

我們的 K&S 建議:從現貨的 Naniwa Chosera 1000 開始(或 400/1000/3000 的階梯組,從缺口修補一路到細化),再用 Atoma 金剛石板保持砥石平整。砥石若是凹的,就算刀口看起來鋒利,也很難維持穩定角度。
